Bar Harbor Blondes have a briny, buttery taste that is both savory and sweet with a rich umami base.

The meats have a pleasant firmness and a crisp, clean finish. The cocktail-size shells are deep-cupped, well-manicured and bright like their namesake. They are known for being remarkably easy to shuck.

Small to medium size shell with a strikingly consistent shape, and cup depth. Salinity is pronounced; the density—exceptional. The flavor is briny and meaty with rich umami. The liquor has a bracing salinity and there is a desired tightness and firmness to the flesh. The body, which is not especially sweet, fills the shell completely. Distinctive and unique, with flavors of bladderwort.
